    Fight-the-Sniffles Kale Soup

    Super easy! Fat free, gluten free, vegan.

    1/3 cup or so of red miso
    6 or 7 potatoes
    2 bunches of celery
    1 bunch of black kale
    salt
    pepper
    hot sauce

    Peel and slice the potatoes thin. Toss them in a stock pot and fill with enough water to cover them about 2 inches deep. Add the miso. Boil, stirring when you remember, until the potatoes are soft. Use a potato masher to smoosh them up until they make a creamy base for the soup. Slice the celery and add to the soup. When the celery is almost done, add the kale in bite sized strips. Simmer until the kale is tender. Adjust the seasoning, go heavy on the pepper if you are getting over a cold.

    Aaah, good for what ails ya'!

    (add some olive oil if you want the soup to stick to your ribs a bit more)

    No recipe really. Start with the chicken carcass from Costo that I made a few meals from, toss that in the crockpot along with 3 celery ribs, 3 carrots, onion chopped in quarters, a few whole black peppercorns, one bay leaf.

    Make stock.
    Strain stock.
    Take the bay leaf out.

    Put chicken carcass aside, cool it and toss the shredded decent chicken meat back into stock.

    Dice tomatoes and potatoes very small, pan roast tomatillos because you don't have a gas range, chop those up small, cook till it's soup

    Top with sour cream, corn tortilla shreds or both.

    You know, I've only had kale once, many years ago. My great aunt grew it in her garden, and once during a visit she served it with a meal. I didn't like it -- it was really bitter.

    Is it always bitter, or was it just maybe the way she prepared it?

    It's not bitter. Do you like chard? It's similar.

    ... it can be bitter, depending on the soil composition, age of the leaves, growing temperature and humidity...

    But it needn't be bitter. Different varieties have different flavors (curly kale, black/lacinato kale, red Russian kale). I think it's almost always stronger than chard though.

    Sounds kinda like the Ribolatta soup someone posted here a few years ago. Just add some white beans.

    Oooh, that sounds good! I've still got 1/2 pot left, I'll throw beans in it for tomorrow's dinner.
