Here is the promised recipe for Bran muffins. Very easy and they keep quite well.
Refrigerator All Bran Muffins
2 cups Nabisco 100% Bran Cereal
2 cups of boiling water
1 cup oil
3 eggs well beaten
1 quart of lowfat Buttermilk
5 cups all-purpose flour
2 cups of sugar
2 teaspoons of baking soda
1 teaspoon of baking powder
2 teaspoons salt
2 teaspoons nutmeg
4 teaspoons cinnamon
4 cups Kellogg's All Bran Cereal
Directions:
In a small bowl, pour boiling water over Nabisco bran cereal and set aside. Combine oil, eggs, and buttermilk in large bowl.
Combine flour, sugar, soda, baking powder, salt, nutmeg, and cinnamon.
Add to oil mixture.
Stir in soaked bran cereal and Kellogg's All-Bran Cereal. Stir just enough to moisten and evenly distribute liquid.
Batter can be stored in refrigerator in an airtight container for up to 6 weeks. After storing, do not stir batter. Spoon out as needed. Bake in muffin pan for 15-20 minutes at 400 degrees.
