    yesterday:
    B: half a spelt roll dipped in olive oil, 4 slices chicken breast, a couple of pieces of avocado, and a very
    small slice of Machengo cheese, cBffee, blueberries
    15.5 mile ride, part of it (11 miles) was for fitness and the rest, to go to Trader Joe's and back home. I got overheated and felt weird, so I ate a Shot Block
    L: ham and low fat swiss on the other half of the spelt roll, an apple
    S: 2 dried apricots, walnuts
    D: went to break the fast dinner for Yom Kippur, although I obviously didn't fast. I had half a bagel and cream cheese, lox, tomato, cucumber and tomato salad, fruit salad, and a small amount of kugel made with gluten free noodles. I did have a couple of small pieces of rugelah type pastries and coffee.
    Woke up this morning weighing 1.5 lbs. more than Wednesday

    Today:
    handful of almonds and dried apricots before very hard boot camp class
    B:chicken breast, green chili salsa, grated low fat cheddar in a whole wheat tortilla, blueberries, coffee
    L: turkey Cobb salad at a restaurant
    S: walnuts, cranberries, chocolate bits
    D: 2 tuna burger patties (made with whole wheat bread crumbs and left over brown rice and an egg yolk), sweet potato, sauteed mushrooms, glass of red wine

    How do you roast your kale? I've never done it; I usually just saute it with bacon and some garlic. Not that I'm tired of bacon and garlic, but...

    Also, roasted parsnips (and other root veg, but not potatoes) and cauliflower with a nutmeg+apple cider glaze is fantastic. Good with pork, if you eat it. or chicken. (And I did a maple-mustard glazed version earlier this year. Sooooo good.) Anyway.
    At least I don't leave slime trails.

    I found a decent recipe for making parsnip oven "frys". I no longer eat white potatoes and was curious how they would be, it was fine.

    Roasted kale is easy, and my favorite kale for this purpose is Lacinto Kale (sometimes called 'Dino' kale because it looks like a reptile's skin). Actually I prefer Lacinto to other kales but any of them will do - I just slightly prefer the flavor of Lacinto Kale. Trader Joe's is currently selling already-cleaned packages of it for a good price

    Rip the kale into whatever size you desire, toss with oil of your choice and a bit of sea salt and black pepper, and roast in a 350/400 degree oven for 15-20 minutes. Yummy! Make more than you THINK you will need for of course a lot of volume is lost in the cooking. Play with the roasting time as there is a fine line between done and a bit too-well-done

    S: 2 dried apricots
    L: 2 veggie burger patties, cole slaw, an orange
    S: slice of Ezekial raisin bread and soy nut butter
    D: veal "meatloaf" and a salad, 2 squares dark chocolate, glass of red wine

    L: roasted chicken thigh wrapped in 1 savory pumpkin pancake
    1-hour bike ride
    D: grass-fed beef chili, spaghetti squash and one egg poached in the chili - yummy! Spinach salad with walnuts and walnut oil dressing, 1 beer. 2 squares 88% dark chocolate.

    L: 2 veggie burger patties, cole slaw, an orange
    D: (restaurant) salmon tartare, a couple of bread crisps, skirt steak, I ate 2/3, and a huge chopped salad, 2 glasses of red wine, shared an apple cheese cake slice with DH, I ate about 1/4
    Saturday:
    2 egg omelette with turkey sausage slices, low fat cheddar, slice of Ezekial raisin bread, blueberries, 2 cups coffee
    S: handful of almonds
    L: 2 home made salmon burger patties, cole slaw, an apple
    19.5 mile ride
    S: a few ww pita chips, hummus
    D: fennel turkey meatball soup with tomato, spinach, chicken broth, navy beans, whole wheat pasta, salad, 2 squares dark chocolate, glass of red wine

    B: Sausage/Veggie Frittata, coffee with cream
    1 hour group training session with a vegan protein shake following (mixed with water)
    L: "soup" made with beef bone broth, onions, carrots, kale, mustard greens, beef. Small mixed greens salad with a couple of walnuts, avocado and walnut oil for dressing
    D: See lunch, minus the salad - I wasn't very hungry. 2 walnut halves and 2 squares of 88% dark chocolate for dessert

    I've only been eating 2 meals a day for the last week.

    Yesterday:
    Skipped breakfast (woke up late), apart from a doughnut and a few pretzels at work.
    Coffee
    An apple
    "Dinner" at a Halloween party. 4 chicken wings, a few pieces of pickled asparagus, 2 cheddar-apple hand pies, a couple chips with salsa, a piece of cornbread, several stuffed dates, a few shrimp. 1 beer, 1 hard cider, a little wine.
    Then the hosts (my adviser and his wife) insisted on loading me up with food.

    Today:
    B: Tea, cereal
    S: Piece of naan, 2 doughnut holes
    S2: 1 cookie, a chicken wing
    D: Pasta in a cream sauce (homemade!) with chicken sausage, Brussels sprouts.
    small piece of chocolate. I think I might have some yogurt or a hot chocolate in a little bit.

    Crankin - I bought ox tails from Whole Foods, but can also get them from my grass-fed farmer (though he is out of grass-fed for the year).

    Yesterday:

    B: eggs, sausage, roasted brussels sprouts
    1 hour hard group training session (and I mean HARD)
    S: 1/4 cup ox-tail stew
    L: Last of the ox-tail stew with veggies
    D: left-over lemon-artichoke roasted chicken, spinach salad with strawberries, celery and other veggies with extra virgin olive oil/balsamic dressing, roasted squash and a small amount of chopped frozen strawberries drizzled with coconut milk for dessert (amazing how this fills my ice cream cravings).

    L: tuna in oil on a bed of lettuce, grape tomatoes, fig balsamic vinegar, cup of roasted red pepper/tomato soup
    S: nuts, chocolate, cranberries
    D: we went out to celebrate my passing my boards, at the Colonial Inn. It was dead, since it was snowing and windy .
    I tried to be moderate... I had a glass of Prosecco, shared an arugula and fresh ricotta salad with DH, and had salmon on a bed of braised brussel sprouts/almonds, with fingerling potatoes. I ate half a slice of cornbread, couldn't resist, it's their specialty, since like, 1776.
