B: egg whites with a couple of slices of ham and chicken, green chili salsa, 1/4 avocado, an orange, coffee
    S: handful of walnuts
L: salad with chicken, black beans, sprinkle of low fat cheddar jack cheese, tomatoes, lettuce, salsa, side of blueberries and strawberries
    12 mile hilly ride
S: 2 dried apricots, piece of matzah with margarine
D: It's Restaurant Week, so we went to the Blue Room in Cambridge. You get a 3 course dinner for a fixed price. Except for the dessert, I did fine. Had a shaved veggie salad for my first, grilled Arctic Char on a bed of parsnip which looked like a potato pancake, and an upside down apple crumb cake with vanilla ice cream. The portions were smaller, which means they were normal. I could have done without the dessert and I left most of the cake part.
And I had 2 two glasses of rose wine. Feeling very spring-like.

    Today:

B: eggs scrambled with veggies, fresh side "bacon", coffee
    14 mile easy bike ride
85 minute hard group workout with a protein shake afterwards
L: beef shanks in broth with spinach and a poached egg, sweet potato
D: Moroccan Meatballs over cauliflower-rice with Velvety Squash - and both were lovely! I was going to make some cauliflower rice pilaf but am tired of cooking, will probably make it tomorrow night.

HERE is the recipe for the velvety squash - and it is VERY good. Any winter squash or even sweet potatoes will do - I chose to use kobacha squash. I really like them and I can cut them far easier than butternut squash.

Re: What did you eat today?

I like garlic I only made a small squash so I cut the garlic in half. I didn't have pecans so I used what nuts I had. Very tasty and a different way to make squash and to get some good carbs into my diet.

I thought I looked a bit slimmer in the mirror as I got out of the shower today so I tried on some pants that have been too small to wear for the past few months and they fit! Yay! I love it when my wardrobe expands for free!

B: sweet potato waffle topped with almond butter, 1/2 banana, pork sausage patties, black coffee
L: left over pot roast, roasted sweet potatoes and a green salad
    S: hard boiled egg, apple
D: salmon, asparagus, salad and fresh pineapple.

Last night, we had to run errands so I had salmon and veggies at a restaurant instead of cooking my own, so I'll be making it tonight!

    more coffee at work
L: salad with lettuce, tomatoes, chicken and ham, salsa, an apple, handful of nuts
S: small corn tortilla and a wedge of cheese (I don't know the name, it's one my DH likes)

I need to have more in my diet and it has/ is challenging to get enough without too much fructose. I am using you as an example which really helps... Thank You

Well then, you are welcome! I probably need to reduce my fruit intake a bit but it adds such variety that I haven't bothered.

I am going to have to start paying attention to my starchy carb consumption (particularly timing) as I start biking more, but for now, I don't really think about it. I do find that I have a bit of a preconceived notion of what dinner should look like from my upbringing. A good meal includes meat, a big serving of veggies and a small serving of starch. I tend towards that template whether I mean to or not!

    Wednesday
B: sweet potato waffle w/ almond butter, 1/3 banana, sausage patties, black coffee
L: tuna salad with homemade mayo over arugula, spinach, red peppers, cukes and celery, clementines
D: unsure - I think we'll be out (car shopping!) so I might suggest Chipotle so that I can get a carnitas salad with guacamole (my favorite!)

very short run after work (less than 2 miles).
