I love short, simple, satisfying recipes.
Here's what I just ate for dinner:
Tuna Pasta
1 can solid tuna
olive oil
pickled capers
parmesan cheese
pasta (this recipe is gluten-free if you use rice, quinoa, corn, etc. pasta)
Boil up enough pasta for two. Drain, add enough olive oil that the pasta is coated. Drain and break up the tuna, add to the oiled pasta. Add more oil if tuna is dry. Add capers. LOTS of capers! (I love capers) Maybe 3 tablespoons to start. Mix it all up, sprinkle parmesan on top.
Takes maybe 10 minutes to make. You can add just about anything else you feel like, the olive oil-tuna-caper base can go in all kinds of directions. Also very satisfying plain.
