What's a uni? I don't mountain bike but the roads in Michigan are bad enough that I might as well be.

I found myself an easyish morning job that allows me to do uni two afternoons a week plus cycling. (Will check on monday to see if i can bike to the new and "hopefully working at permanently" building.) It's not a sit down job & work 4hrs a day.
I started a few weeks ago & sort of have a handle on my food n water intake but still feel like i'm struggling w mental focus if i mtn bike afterwards. I drink about 1l of water during the 4hrs, eat raisins w pumkin seeds plus ryvita w peanut butter. After, I have a banana & an orange, possibly some toast w my coffee at the cafe I can venture to. Oh yeah, brekkie can often be oatmeal w banana n honey or cereal w yoghurt.
I walk fast & am wondering if my body is keeping up? Normal road cycling is fine as I don't have to really think..it's the mtn bike rides that I want to keep mental focus for.
Yes, i'm off to a dietician in the next few weeks..
Any ideas?

You didn't describe much protein in the original post. I think you should eat more protein throughout the day, but that's just me. I need protein to get through a workout.

For anything that takes a certain amount of energy and oomph I'd be eating right before, more protein the longer I expect to be out. Raisins are sugar bombs to my body, I just eat them when I need instant energy. I think bananas are the only fruit I can eat on an empty stomach and not feel hungrier 20 min later. Fruit before or after a regular meal is great though.
