    Good energy bar recipe...

    These are really easy and are great to take hiking (they hold up in a backpack without crumbling!) and would be good for long rides too.

    FRUIT & NUT BARS

    4 eggs
    3/4 cup sugar
    1 tsp. vanilla
    ½ tsp. cinnamon
    1 cup flour (I use whole wheat)
    1 cup chopped walnuts and/or almonds
    1 cup raisins
    1 cup of dried cherries or cranberries
    1/2 cup chocolate chips (optional)

    Mix eggs with sugar, vanilla and cinnamon. Beat in flour. Mix in remaining ingredients.

    Pour into an oiled pan and bake at 350 degrees F for about 35-45 minutes. Cut into squares or bars.
