I love this salad. Green beans (cooked in boiling water for 2 minutes/then put in cold ice water to cool; chopped cucumber, chopped tomato, chopped red or sweet onion, chopped avocado; with a vinagrette dressing; i.e. 1/3 c vinegar (rice vinegar, balsamic, red, whatever you like; 2/3 cups olive oil, chopped basil, and garlic.
You can substitute cooked edamame into this recipe as well. This and a piece of grilled chicken, glass of nice crisp Pinot Grigiot and you have an excellent dinner

my mum makes potato salad with oil and vinegar (I believe it's Austrian). Kind of similar to the recipe, only she slices the potatos into maybe 1/4" thickness. She'll also chop raw red onions in there, but I don't like raw onions so I don't use it. Parsley adds such a nice flavour to it.
I like tried this salad this week, and it was fabulous. Depending on how big the peppers are, you might want to make double the dressing.
I didn't eat it with any lettuce, though. It seemed to stand up fine on its own.
