I was searching for a healthy potato salad recipie & came accross this one

I've done a few searches here but i'll ask anyways...Do you have any good recipies for when it's really hot out & don't want to eat much??? I'm planning our meals again and thought i might ask!

Most people here add a bit of chicken or vegetable stock (from cubes) to the potatoes after slicing, then a vinaigrette - ours contains finely cut onions, chives, pickled cucumbers and perhaps a bit of mustard. We've stopped peeling the boiled taters and have them country style.
We like this with bratwurst and - brace yourselves - apple sauce (Where I come from, we are adamant about no mustard with our specialty bratwurst - but you may).
I like making bulgur wheat or couscous taboules in summer. Add parsley and mint, an olive oil based sauce with some heat (harissa if you have it), chopped olives, tomatoes, bell peppers, maybe some chicken or seafood mixes.
The couscous can be enlivened with saffron.
Or gazpacho. With old white bread in it for some carbs and boiled egg decorations for protein.
or the old tomato, mozzarella and basil salad w/balsamic vinegar - italy calling - yumm.

I love this salad. Green beans (cooked in boiling water for 2 minutes/then put in cold ice water to cool; chopped cucumber, chopped tomato, chopped red or sweet onion, chopped avocado; with a vinagrette dressing; i.e. 1/3 c vinegar (rice vinegar, balsamic, red, whatever you like; 2/3 cups olive oil, chopped basil, and garlic.
You can substitute cooked edamame into this recipe as well. This and a piece of grilled chicken, glass of nice crisp Pinot Grigiot and you have an excellent dinner

my mum makes potato salad with oil and vinegar (I believe it's Austrian). Kind of similar to the recipe, only she slices the potatos into maybe 1/4" thickness. She'll also chop raw red onions in there, but I don't like raw onions so I don't use it. Parsley adds such a nice flavour to it.
I like tried this salad this week, and it was fabulous. Depending on how big the peppers are, you might want to make double the dressing.
I didn't eat it with any lettuce, though. It seemed to stand up fine on its own.
