I've been celiac for a few years now. I even have a gluten-free bakery close to work. We make pizza, pancakes and pasta. However, this weekend is my first century. I'm worried about the lunch being sandwiches or pasta--that I can't eat. My celiac sister was going to be the sag wagon, but she backed out. Any suggestions? Should pack everything I need? We've packed lunches for long rides before, but I'd need twice as much! Suggestions?
