Personally, I don't like the idea of bringing a sandwich/fruit as a back up. I'd encourage PowerBar or ShotBlok. They're compact, won't get soggy, and don't take up much room. If you fear fatigue, you can take Excedrin with Caffeine before you start.
Some may think this an overreaction, but I usually change my tubes before a long ride...most of my flats are from worn out stems, so this reduces my risk of a flat...
