The Basil panniers are designed to go with old fashioned "rat-trap" racks. This kind of rack has a spring loaded arm instead of a platform. The panniers are joined with a strip of fabric that slides under the spring arm, which catches the panniers and holds them in place. They can be used with other racks, but I'm not sure how well it would work. If you have a more modern rack, a different pannier might work better.
The ones I've seen fold flat, but are not as inclined to stay in place as Wald folding baskets or REI's grocery pannier.
They are very cute, but I'm not sure how sturdy they'd be over the long haul. And my Dutch gaming buddies are male, so they wouldn't be caught dead with the Blossom panniers. Nor with any of the other cute ones. And knowing them, they've both got black panniers :P.
