I don't know if this will help at all, but I have a journal / article that essentially is my packing list for biking tours - including both on the bike and off the bike clothing. I used it as a reminder for myself for a non-biking trip last fall, and I was able to get away with only a small carry-on for a week-long trip. Of course it does require that I wash clothes every night!
On the shoe front, if I'm on a biking trip I usually take my biking shoes and Chaco Z/1 sandals. These sandals are pretty stable and I have happily used them for hiking - depending on the terrain, of course. For a hiking trip I may take hiking shoes (or boots) plus again the Chaca sandals.
