I have an expandable Jandd wedge that holds quite a bit.
I had the cheater brakes, too, when I first got my bike. Found I never used them, so had them removed. Now, for really long rides, I sometimes use a tiny little wedge bag mounted backwards, just in front of my stem. I put things in there I rarely need to access on a long ride, like a couple tools, tube, cartridge, etc.
That way, when I'm getting into the wedge bag for a jacket or snack or something, it is just easier to get at, and I can carry a tad bit more on the bike without filling my jersey pockets, which bugs me a little.

Glad you brought this up, I was thinking the exact same thing yesterday! I want something big enough to carry some tools, a spare tube, my phone, and some extra food. For the really long rides, obviously. Shorter stuff I'll just stick things in my pockets. I just don't want something that's obscenely large or will drive me nuts because it's bouncing around.
I sometimes do unsupported rides up to about 10 hours, and sometimes the areas are rural. I have a frame pump for emergencies. I also have 3 bottle cages, but of course I still have to refill water. But, I find that with the underseat wedge, and the little wedge thingie on my bars...along with my pockets...I can carry everything I need, including a couple cartridges/tubes, food, some tools, phone, lip balm, small first aid, rain jacket, etc.
