Mine's pretty basic:
-cook up some hamburger with some chopped garlic and onion; jalapeno peppers/bell peppers go in at this time as well if I have them on hand
-add a can of tomatoes and a small can of tomato sauce, some kidney beans and/or black beans, and lots of cumin and chili powder
-Sometimes I add corn or other veggies (chopped fairly fine) as well.
