    need ideas to take to bbq

    I know this is last minute but...
    I am going to a BBQ tomorrow(of cyclists) and am not sure what to take for an appetizer type dish. I am going to make brownies, but also want to take something else. I'm thinking healthy,easy, and different then the norm.

    any ideas? I have never used quinoa and am thinking that might be a good idea.( worst comes to worst, I go to Whole Foods and buy some prepared food)

    What about cut up veggies(carrots, capsicum, etc) with a hummous dip?

    My favorite quinoa dish is a in bean salad with blackeyed peas, chopped raw green pepper, red onion, celery and carrot, tossed with a homemade red wine vinaigrette and served over lettuce. Healthy, easy and different from the norm. It should work fine at a BBQ - more a side dish or vegetarian main course than an appetizer though.

    In another topic here someone posted a recipe for black bean salsa. I haven't tried it yet but it sounds awesome.

    Side Dish?

    OK, so this isn't an appetizer, but a side dish.... from a good Cajun camp cook.

    Mike's Purple Cold Slaw
    1 head purple cabbage, shredded
    1 red onion, sliced thin
    1 TBSP poppy seeds
    1/2 cup (or more) chopped walnuts, lightly toasted
    raspberry vinigrette (Mike used Newman's Own)

    Mix everything together. Takes about 1/2 a bottle of the vinigrette.
    Unlike mayonaise based cold slaws, this one you can leave out at room temperature. And being purple, it's rather funky.

    Stuffed mushroom caps:

    clean off the mushrooms
    pull out the stems
    fill the caps with cream cheese
    sprinkle dill on top


    Quinoa Salad:

    cook up a bunch of quinoa and let it cool completely
    chop purple onions, celery, and tomatoes
    add balsamic vinegar and olive oil
    mix it all up, it ends up looking rather pretty with the purple onion
    (you might want to add salt, too)

    Everything sounds good, now I have to decide which to make. Whatever I don't make today I will be making in the future for me and the dear bf.
    mm making me hungry again!!
