Heat ghee (or canola oil), fry curry powder until spices are browned and aromatic.
Add chopped onions, carrots and celery and saute about 5 minutes (the original recipe says "until browned," which I have no idea how you would tell with all the coloring from the fried curry powder
Add rinsed red lentils (masoor dal) and about 3 times as much water as lentils, bring to a boil then cover and simmer until lentils are mushy, 30-45 minutes, stirring occasionally and adding water as necessary
Add canned tomatoes (or you can add fresh tomatoes along with the other veggies)
Add salt to taste
Puree with a stick blender
If desired, garnish with or stir in a dollop of yogurt
That's one of my go-to recipes for a really easy, delicious meal. We usually serve it with rice (to complete the protein) and garnish with plenty of chopped cilantro also - I guess those could be pureed in as well.
PS don't necessarily blame the MIL. I have TMJ as the result of a fad that many orthodontists followed when I was that age, leaving me (and thousands of others) with an anterior open bite. Three gold molar crowns already (no porcelain with the amount of force they take), five to go![]()
