I have a monster cookie recipe that has no flour that I love!
To make it chewy, replace white sugar with golden brown or half dark brown and half white sugar. The molasses will keep the cookie chewy.
The egg white tends to dry out the cookie during baking. if a recipe calls for one egg double the batch and use one egg and one egg yolk no white and tablespoon of milk, oj, or water. for PB cookie use TBS of milk.
The two things menioned will make the dough retain its moisture while baking and will keep the cookie chewy. The other trick is to let the gluten develop in the flour (overwork the dough).

And if anyone wants a package of pumpkin pie oatmeal cookie, please let me know. I will send you a package of the pumpkin pie oatmal cookies. The only drawback is that I have to do this at home and not at a commercial kitchen.

I have a really yummy choco chip recipe that I substitute half of the butter with peanut butter. They come out super yummy. and they are on the soft side. They are called Rocky Mtn. Chip cookies. I'll dig up the recipe if it sounds good to you.
They do have flour- and oatmeal..Tho I never really notice the oatmeal in the finished product.

Rocky Mtn. chip cookies
1/2 cup butter
1/2 cup peanut butter
1 cup packed brown sugar
1 cup white sugar (I use organic so it's kinda beige)
2 eggs
2 tsp. vanilla
2 tblsp milk
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups oatmeal (quick cooking is ok)
1.5 bags of chocolate chips. I use 1/2 bag each of vanilla, milk, and semi sweet.
cream butter sugar, beat in eggs, beat in milk/vanilla, mix in flour/soda/powder/salt, then stir in oatmeal and chips.
bake at 350 degrees 8-10 mins.
YUM!!!
