    Just curious, with the veggie lasagna, are you using the silken tofu to replace the ricotta or do you mix it with it?

    I hope I do okay tonight. Did okay all day, but tonight is a memorial celebration for a good friend of mine. We're all making dishes that were her favorites or remind us of her. Hope that her favorite champagne doesn't make it problematic for me to resist all these amazing treats. (I made a goat cheese with fig sauce and chopped almonds...)
    For 3 days, I get to part of a thousand other journeys.

    I've been mostly good minus the fried chicken at our meeting yesterday. It was only one piece but sheesh...it was 10 points.

    The bad thing is we're leaving for vacation tomorrow. Between airplane food (are flying from the West Coast to New York) and eating out, I despair.

    Any good travel tips? I AM bringing my running shoes

    Did ok today, but afraid of the weekend, unfortunately we tend to eat out a little too much on the weekend since we're always running around. I"ll try to make healthy eating out choices.

    Thanks to everyone that is posting, it's really helping me keep focused.!

    Coyote - I'll mix the tofu with ricotta, or my new favorite is to only use goat cheese and tofu in the lasagna, with some parmesan on top. Since goat cheese is so strong you don't have to use much and the silky tofu gives the texture.

    Sorry I am late - I just found this thread.

    I am definitely in. My weight is 143. My goal is to be 137 by Christmas, with an ultimate goal of 129 sometime in 2008.

    This is me staying accountable:

    Friday, Nov 9

    Total calories: 1570 (all healthy)
    Exercise: None - a rest day
    Water: 72 ounces
    Vitamins/Supplements: Multivitamin, Calcium, Soy, Flaxseed
    Weight: 143

    I plan to post these statistics every day.

    I did good all day long, until tonight. Son and girlfriend were visiting, left late and we went to get something to eat and to the grocery.

    I ate a pulled pork barbecue sandwich and a little bit of some kind of baked potato casserole (not the entire thing). I did NOT get the soft serve ice cream that they had for FREE. I came home and exercised.

    I would love a thread where we journaled what we ate all day. I know it is different and different amounts for everyone depending on your weight, but maybe we could get some new, good ideas.

    My food is all about time, or lack thereof. This morning did laundry, ran, started packing, and ate 2 waffles (low fat) with butter spray as I was running to the shower. At work, I ate a frozen weight watchers meal and then later had some veggies. I also ate a bagel with fat free cream cheese and a salad. I'll get home at around 11pm tonight when I'll try to eat something (I am starving!) and have a glass of wine.

    This is my normal day, minus the packing I'm fond of the waffles with butter spray because I can eat them enroute.

    On my days off, I make turkey bacon and egg beaters for breakfast.

    I wish I had enough time to cook. I try but it seems like I overbook myself bigtime. THAT is my problem, organization. I'm good with diet food and I'm good with exercise, it's a matter of making sure I have the food so I am not eating out.

    Oh another excellent thing is my new schedule. I had been getting home from work earlier so DH and I went out to eat almost every night. We are bad. Getting home late prohibits eating out to just my days off. That will help!

    My delemia is that I'm vegetarian. All my protien sources have carbs. All the fruits and vegitables I love have carbs and lots of calories. So, I'm having a hard time trying to balance the carb/calories/protien. It makes wanting to eat fruit pointless but I like fruit and it provides other important nutrients.
    Don't forget that all carbs are not created equal! Some are metabolized quicker than others and have a greater impact on your sugar and insulin levels. Fruit is one of the "good" carbs full of fiber, vitamins, and takes longer to eat and affect your blood sugar. Check out a site on glycemic indexes to get a better idea of what it is and how to choose "good" carbs.

    I'm doing ok here but not great. I'm good at staying on track until the evenings. For some reason I've got the munchies after supper so I need to make a plan to deal with that. I rode on Tuesday (16 miles) and did hills on Thursday (25 miles). Ate way too much at Applebees tonight though! Tomorrow morning I'm planning to do about 45 miles so hopefully I can work some of it off.

    I went down hill fast yesterday. I was doing well up until this point. One of our pts. that we took care of last weekend came to bring us a home made chocolate cheese cake. I've never had chocolate cheesecake before. The fact he is 88, still works at his own bakery/deli and delivered it was part of the amazement of this cheesecake also. OH MY this thing was heavenly. My first piece was a small sampler, then I gave in later on and went back for another piece. The cake I bet weighed 5 or 7 #'s, was at least 2" thick and was very hard to resist. My weigh in is on Monday..actually it will be on Sundays for me and I'll post on Monday. I use works scales, I have none. Maybe next week will be better.

    Good morning (well at least to the east coast, or early risers in other time zones!)

    I did pretty well yesterday. I knew last night's dinner would be bad: homemade tortillas, homemade chili, fried potatoes. So I ate really well all day and didn't eat all of my dinner. I may have had a bit extra of tortilla though, but I'm not going to beat myself up about it.

    So this morning I went to have steel cut oats with raspberries. But as I was cooking the oats a green slime appeared on the surface, so I had to toss them. Has anyone ever seen this? Now I'm searching for some healthy breakfast- maybe I'll settle for egg whites or something.

    And great job everyone, you're all really motivating me!

    Well I did poorly yesterday. I started off well but once I got home it was all downhill! Hubby is still away on his hunting trip in Montana. It's been a week since he left and one more week to go. My kids are away at college. I spoke to all of them on the phone last night. After I hung up I was feeling lonely. I walked into the kitchen to make myself dinner. I didn't feel like cooking for just me so here's what I had:

    A large bowl of cheerios with 1% milk
    left over coleslaw from the other night
    and a half dozen of those holiday almond crest cookies
    Oh and a cup of tea

    talk about carb overload!

    It rained all night long. I could hear the rain hitting my bedroom window. This morning looking outside it's windy, gloomy, and overcast.

    But it's a new day. I'm going to try and go for a walk later, probably around the lake, and then clean the house. I think I am one of those people who get "depresssion" from lack of sunlight. I feel so blah and sad. Or maybe I just need a good bike ride. I can't wait for Joe to get home! He said last night he may come home early. Friday. If so we can ride next weekend!

    I am going to do better this weekend but I am sick with an awful cold and have very little resistance to temptations. When I ran out of "healthy" food on Thursday, I had no energy to go shopping, so ended up making less-than-stellar choices. I am now stocked up and will hopefully eat better again. I think my dieting theme song is Tubthumping - "I get knocked down, but I get up again, you're never gonna keep me down."

    Keep at 'er everyone. It takes a lot of perseverance to change eating habits. You can do it. If you haven't been successful yet, keep starting over. Once you have 3-4 good days in a row, it gets easier. And don't expect the weight to fall off fast. Sometimes I "diet" for an entire week and my weight doesn't budge, then the next week, I lose 2 lbs. Go figure.

    I am sticking to it today! And that gloomy morning weather turned into GORGEOUS afternoon weather! I just got back from a wonderful 25 mile ride. And for lunch I had a small piece of broiled chicken breast (boneless and skinless) and rice. Breakfast was good too. Oatmeal! So to everyone who did bad yesterday (like me) just jump back on the wagon today! And don't give up.

    Hey guys. I've been away for a bit, not doing so well. Wednesday I came down with a really bad UTI, the worst I've ever experienced. I'll spare you the details, but I almost ended up going to the ER because of the pain. Fortunately the local Care Now was open and I could be seen almost immediately.

    They've got me on some meds for the next 10 days, but it's really been working a number on my stomach. Haven't eaten much for the last few days, but I finally regained my appetite today. Skipped breakfast, had a salad and baked potato from Wendy's for lunch, but "dinner" is what got me. I work the night shift, and one of the guys went out and bought what looked like $20 worth of $0.99 double cheeseburgers from McDonalds.

    I ate three.

    I guess it's a good thing that I'm starting to feel better and am getting my appetite back, but seriously... THREE?

    Haven't jumped on the scale since Monday, I suppose I'll just wait a couple more days and do it on a weekly basis.

    Congrats to all the chicks out there that are staying strong!

    (And as a side note to Firenze, no I've never seen a green slime surface on a bowl of oats. To the best of my knowledge they don't go bad, so I have no clue what happened there.)
