I was just thinking about making up a giant batch of waffles this week to celebrate the beginning of cross season in Southern Oregon. I have a number of waffle recipes that I rotate through, but this seems to be the family favorite:
Chocolate Waffles
1 1/2 cups all-purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup white sugar
3 Tbsp unsweetened cocoa powder
1 cup milk
2 eggs
1/4 cup butter, melted
Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar, and cocoa. Stir in the milk, eggs, and butter until mixture is smooth. Pour mix onto hot waffle iron (greased). Cook until golden brown. Smother with topping(s) of choice.
