    pumpkin waffle recipe

    I'll post my delicious pumpkin waffle recipe later this evening. (I worked last night and need some crash time.) This treat is perfect for autumn.

    Here it is . . .

    Pumpkin Waffles

    2 cups biscuit mix
    2 Tablespoons packed brown sugar
    2 teaspoons ground cinnamon
    12 ounces undiluted evaporated milk
    1 teaspoon ground allspice
    1/2 cup pumpkin
    2 Tablespoons oil
    2 eggs
    1 Tablespoon water
    1 teaspoon vanilla

    Mix in stages. Beat till smooth.

    Bake on waffle iron.

    Enjoy!

    Yeah, pumpkin waffles.

    Too bad cane syrup is so hard to get ahold of up north. I miss that stuff.

    Yummy. I am so excited to try all these recipes.
    Thought I would share one I tried last week. These smell soooo yummy while cooking and taste just as good. I did a mixture of white and whole wheat flour and they turned out really good. I also added the molasses. Also, I used egg substitutes and Fat free milk, as I didn't have any buttermilk, but it turned out fab.

    Enjoy!

    Ginger Waffles

    1 1/2 c. flour
    1/4 tsp salt
    1 tsp soda
    1 tsp baking powder
    Equivalent of 3 beaten eggs
    1/2 c. molasses
    1 c. fat-free buttermilk
    1/2 c applesauce
    1 tsp ginger

    Thanks a lot, Sulis! I'm supposed to be working. Yet, now all I can do is sit here daydreaming about waffles.

    I used to make a really good sourdough waffle. Crispy on the outside and soft on the inside. But, you have to have a sourdough starter to make it. I'll dig the recipe out later if anyone is interested.

    Too bad we all live so far away from each other. A TE waffle ride would be super fun! A local riding group that DH sometimes rides with does an annual waffle ride. They ride to a park with waffle irons, batter, and other breakfast foods in tow. Than it's a big waffle party where they taste each others' wares. Mmm.....
