My two LBS's put el cheapo plastic flats on the bikes for sale, but they encourage you to bring pedals and shoes if you'd rather use them.
One shop even told me to go ahead and bring my Brooks saddle in if I wanted to do some serious test-riding!

A self respecting LBS will encourage you to bring in your pedals with your shoes.
Tried Cervelo P2. Tried QR Seduza. Tried Guru Chrono'Alu. I tried all three with my own pedals and my own shoes. P2 and Seduza was only on a mag trainer (not so like LBS) and Chrno'Alu tried on short road (LBS).
Not sure if I want P2 or Guru's carbonio TT bike...
