    Here's my super-easy, I-don't-feel-like-cooking black bean burrito recipe:

    2 15 oz. cans of black beans, drained and rinsed
    1 16 oz. jar of salsa (I like Desert Pepper Trading Company's Peach Mango salsa)

    Mix the beans and salsa in a bowl.
    I make 6 burritos (I like Mission's low carb tortillas), put them in a baking dish and spread the excess bean and salsa mixture over the top.
    Heat in a 350 degree oven for about 25 minutes.

    trekin - peach mango salsa????? Is this really good? I've seen it, but was afraid to try it. I think I'll give it a try. Sounds like a super easy recipes - my kind Thanks Nancy

    Seasoned Rice vinigar and peanut oil makes for a deliciously light-tasting vinaigrette.

    rice vinigar doesn't seem to have as strong a vinigar taste as other vinigars.

    Best ever salad dressing...

    This dressing is FANTASTIC....
    It is a restaurant recipe, just can't share where from! Secret!!

    3 C olive oil
    1 C red wine vinegar
    1 T each:
    Ground Mustard
    Garlic Powder
    Salt
    Pepper
    Parsley
    Oregano
    4 Ounces Blue Cheese or Gorgonzola

    Put all of the ingredients in a blender and mix. Really tastes best on iceburg lettuce, but is good on better lettuce, too.

    basic oil and vinegar dressing starts with 3 parts oil to 1 part vinegar.

    then you need some sort of emulsifier to get the oil and vinegar to mix. This is usually dijon mustard stone ground(cooked egg yolk from boiled egg works too).

    simple honey mustard dressing:

    1 tsp mustard
    oil and vinegar in above proportion for total of 1/4 cup
    (usually canola oil and red win vinegar. never distilled vinegar)
    1 tbs of EVOO
    2-3 tsp of honey
    pinch of salt
    dash of worcester sauce
    dash of tabasco
    1 tsp of lemon juice

    mix vigorously of all ingredients and adjust taste with more oil, vinegar, lemon juice, honey and mustard. Season with cracked pepper.
    Play with it.

    you can substitute lemon juice with 2 tsp of freshly squeezed orange juice. And if you want with the lemon juice, add fresh herbs like terragon (my fav)

    In a burrito, anything goes. It's whatever you like. lettuce, tomato, avocado, sliced radishes, onion, sour cream, cheese, meat, steamed vegi, ...
    cumin, chilli powder, jalpeno, salt, pepper, lemon juice...
