Etoufee is essentially crawfish tails smothered in butter (lots of butter), onions and seasoning. The crawfish "fat" makes it creamy. Very yummy stuff!

Our crayfish up north here are so big we call them LOBSTER! They are somewhat pricey however, so most of the time I'll "settle" for sashimi.
