Does anyone have any good vegetarian recipes? What's your favorite?

Whatcha lookin' for? Entertaining? Simplicity? Comfort food? Low fat? Scrumptious?

There are some soup and that wonderful looking stuffed shells recipe elsewhere on this forums.

Any of the Moosewood cookbooks are usually recommended as well, but I've had much better success (and like the simplicity of) Ginny Callan's Horn of the Moon books.

OK, try this one....I periodically make DH make it up (it is his recipe, not mine) when I need something warm...

I am a Moosewood cook from way back too
If you're into Oldies and goodies I would also go for the Tassajara Bread Book

Low Cal Quick Chickpea Stir Fry over noodles (363 cal.)
    Ingredients
    1/2 cup canned chickpeas drained
1 tsp olive or canola oil
    1 clove minced garlic
    1/2 red bell pepper, sliced
    1/2 cup sliced mushrooms
    1/4 cup frozen green peas
1 oz (dry weight) egg noodles
    1 tbsp soy sauce

    1. Heat oil in non-stick skillet, add garlic and chickpeas and cook 2-3 min on med-high heat
    2. Add sliced pepper, mushrooms and frozen peas to skillet, cook for 5 minutes
    3. Meanwhile, cook noodles, drain and toss in soy sauce
    4. Serve chickpeas and veggies over noodles.

The noodles cook fast because their egg noodles. Very quick and easy meal to make. Nothing fancy, just simple!
