Click into Mapquest, put in Corvalis, Oregon, or your new address, then start zooming in. You want the valley roads leading out of Corvallis towards Amity.
There is actually a bike trail between Corvallis and Eugene; I think the trail runs along 99W. I've never ridden it because it seems like the kind of trail that gets clogged with joggers, walkers, kids on toy bikes and so on. If you want to bike slow, then find that trail. If not, take off on the valley roads, anywhere away from I-5. I might be wrong about the trail, so perhaps confirm that information with a local bike shop first.
Also, when I say valley roads, I don't mean all flat roads. There are rolling hills, and some steep climbs, and some flats; it makes a good ride.
You can head north on 99W to Monmouth, turn west on the Monmouth Highway, which is just another rural road, and by looking at Mapquest you can figure out how to loop back to Corvallis. If you figure out some good rides, let me know, and I will come join you sometime if you invite me. It is a bit of a drive, but hey, anything for a good bike ride.
