I have often thought that when a jersey hits that point where it is not wearable for whatever reason, I would try making one of these from it.

I have the tie back ones. It's actually kind of tricky to deal with the ponytail. I need to try a stubby. I would recommend the tie ones for non-ponytail folks, and the stubby for folks with ponytails.
Does this keep your hair from getting all tangled and matted under the tail? I use a regular Do-rag tie back and tuck my tail up IN the thing trying to avoid matted hair under my tail. When I able to ride, I ride year round so the layers rubbing of jacket, vest, jersey (and sometimes even just the jersey) causes rub and matting. I'm almost ready to chop all my hair off again and start over, but then again, it took a couple years to get it this long.
