    Any shoe which accepts an SPD-like cleat with work with an Eggbeater. One thing you should think about though is foot support. Since some Crank Bros pedals (or any small pedal) don't have a platform, you need a shoe with a very stiff sole so your foot doesn't collapse over the pedal.

    I use Look pedals on the road and Eggbeaters on the trail. I love both for different reasons. Crank Bros makes pedals specifically for road bikes and some have a platform. Check out their website. As long as you have good support via the pedal or your shoe (or best via both) you should be in good shape. Having a recessed cleat can be a good thing. And Eggbeaters have 4-sided entry.
