Give it to her now so she can get everything dialled in and enjoy it - I couldn't bear having a beautiful new bike and not beeing able to ride it for months because the weather was too crap! You can always get a few bike-related bits and bobs to give her on the day itself.

I vote now too. Primarily because she needs to ride some to know what changes need to be made. that may be difficult in December. Either way, let us know her reaction and then give her this addy.
