I really wish you a wonderful adventure. I did lots of self-contained touring in the late '70's-early 80's - NZ, USA, Europe. There is nothing like it and you will collect stories for the rest of your drinking life (and an audience!)
Advice? (Feel like I should give you something as I am so *old* and *wise*)
Get good maps and stay on small roads.
Eat local food and accept invitations. People are concerned with making sure that something bad doesn't happen to you in their county, so they invite you. (Rather than them being the local axe murderer thinking "Bwahahah!")

Have a blast!
Don't pack the underwear. After riding a bike for hours a day, day after day, the last think you'll need is underwear. When I tour, I bring skirts for off the bike to get maximum breezage.
Remember, you can always purchase something you need on the road (like warmer fall/winter clothes). And if you overpack, just mail stuff home to yourself.
