My usual approach to this (beyond sausage, kale and white bean soup) is either bacon (with or without onion or garlic), or garlic, onion and red pepper flakes. Today, I tried something else to go with the curry-spiced meatballs that I dug out of the freezer. I cooked 1/4 of a smallish onion in olive oil until it started to soften, added 1 minced clove of garlic and cooked it until golden, then added three large kale leaves, roughly chopped. To that, I added probably 2 tsp of dessicated coconut (the unsweetened stuff!), garam masala (don't know how much; maybe 1/3-1/2 tsp, but mine is kind of old), and a little bit of salt. Tasty!
