I think this topic came up before, but I thought maybe it was time to revisit it. We're planning a week-long camping trip. While DH and the kiddos have specified they plan on eating their fill of hot dogs and s'mores, I need to come up with some vegetarian dishes I can make-ahead for myself (that will keep for 5-7 days). We do have a camper with (limited) refrigerator space and a microwave.

Orzo Salad
Black bean burritos? I could use canned spicy black beans . . .

Granola
Dried Fruit
