I'd pretty much given up on Gluten-Free replacements, since most was just empty calories. However, I'm already up 2 recipes for biking this summer......

Bob's Red Mill Hearty Bread Mix. It's full of buckwheat, nuts and other high fiber flours. It's 3-4 g fiber per slice. It's dense, but not crumbly and I even made a sandwich. This had serious potential for the handlebar bag this summer.

The above made my husband realize I could have buckwheat! So he added 1/4 c. buckwheat into 3/4 c. Pamela's pancake mix. Follow the pancake directions on the Pamelas. He gets his Sunday morning pancakes and I get fiber! Now if I could just figure out how to slip some into the freezer--the more I increase the recipe, the more he eats

I also bought the "Babycakes--Mostly GF, Vegan, Low-Sugar" cookbook. If I can come up with some muffins or quick bread to substitute for the high-sugar energy bars, I'm golden.
