    Easy, picnic meals for bike ride

    We just returned from a picnic evening meal that we made at home and carted it with us to a scenic area not far from home. There are lots of areas for us to choose. Tonight we ended up by coincidence meeting 2 different folks cycling by whom we knew since we were sitting near a popular bike route.

    Evening meal was:
    Couscous cooked with sundried tomatoes, onions, garlic, chopped red pepper with fresh thyme and basil.
    Slice of rosemary bread with abit of feta cheese. (Couscous was not enough.)
    Fresh cherries
    Water

    Other picnic bike meals have been:
    Baguette sandwiches that we make by piling on smoked salmon, tomato and basil. Or no smoked salmon, but substitute with buffalo mozarella cheese, sliced tomatoes and basil.

    Or bought sushi and sashimi which we eat within 1 hr.

    Ok,ok...these are for occasions, that you've actually planned a meal, then cycling to somewhere pleasant, get off bike and eat without rushing off to hammer on the pavement/road to finish the last leg of trip.
