Yeah, the modern black plastic stuff does not really "go" with this bike.
Those Honjo hammered fenders would look nice. Lots of Rivendellers use those. But me- I'm a minimalist and I can see your Moto with plain chrome fenders like the classic old ones.
Canvas bags are def the called for thing here. Duluth has a few limited supply canvas bags available right now, and they are VERY cheap compared to other brands:

Apparently they found some boxes of old stock bags and are selling them off.

I have both the banana bag and the Little Joe (which is pretty roomy).
I think you could cover most stuff with a LJoe on the back and a candy bar on the front. Since this is a townie bike, you might want to consider a basket for those loaves of French bread and bottles of wine you might pick up in town. Check out VO's REAL classic baskets:
