I finally tried some of the recipes out of this book
and wow they were great. I made some
baked rice cakes with dates and almonds
and some bacon spinach rice egg fritatta muffins. I combined two different recipes for this as I thought these muffins might hold up better (not get squished) than the bar formula in the book
This food was really, really good. I didn't bring a lot as I wasn't sure how it would go over. I can't think of anything worse than being on a big long ride and having something icky along. I wish I had brought a lot more as was sharing with my friends (here, try this) and they like it too. It was all really "light" feeling, even the bacon muffins. They felt really good once I ate them. I'm going to freeze what's left and see how that works.

The baked rice cakes are straight out of the book. For the other I I took ideas from the Denver Rice bar recipe and a Bacon and Egg Muffin recipe that is in the portables chapter of the first cook book and kind of winged it. The format of the recipes is such that you can vary them easily. Example, I used bacon and spinach instead of ham and onion and left out the cheese. Mainly I was concerned that the bars would smoosh really badly, especially since I couldn't find the kind of paper foil they recommend for wrapping. The muffins really hold their shape but don't use paper cupcake lines. (oops)

Reynolds Pan Lining paper is parchment on one side and foil on the other. I found it at Target.
Found it at Fred Meyer. I had to go to four stores to find it for wrapping the bars.
