I really want to upgrade pedals and go clipless but I am worried about finding the right type for me. I toe out really bad (never got corrective braces when I was a kid). I need a pedal that will allow enough play for my feet to turn out and not force them to stay straight.
Any good recommendations?

Find a LBS that uses the "Cleat Alignment" tool. This process places the cleat in the proper location based on your range of motion.

Try Speedplays. I have the same problem with my right foot. I use the X series. They allow up to 25 degrees of float. They take a little getting used to after any other clipless pedal. You're foot feels like it's skating around, but you get used to it pretty quickly. I haven't had any knee or foot pain since I started using them.
Second the vote for Speedplays, but my vote is for Speedplay Zeros. They let you set limits on the float. I tend to toe out too, but I have the limits set so that I can toe out, but not so much that my heels rub against the crank arms. Plus, by limiting the outer range of the float, my release angle is pretty small - when I want to get out, I'm out!
For 3 days, I get to part of a thousand other journeys.

I toe out, not severely, but I definitely toe out. I use Shimano SPDs with 15 degrees of float, and I had the cleats set with the machine/system at the LBS.
Two years on them and so far, so good.
