I've got about six cups of lamb broth left from making stew. I really don't want to have to buy more lamb to use it up, because it's so expensive. (Cubed lamb, barley/potatoes and greens in broth sounds nice, though.) Any ideas?

This sounds goodI would toss some veggies in it (especially greens, onions, mushrooms, carrots and whatever else you might have) , some sweet potatoes or chopped butternut squash, and some meat. Have fun with it! I don't think you can really go wrong with it
Good meat broth of any kind is great, especially this time of the year!
Part of the trouble I'm having with it (as opposed to chicken or beef broth) is that it's not as "heavy" as beef broth nor as light as chicken broth, but at the same time is strongly lamb-flavored. I don't eat a lot of lamb, so trying to figure out what goes with it is a bit of a challenge.

Use it to cook rice, or whole wheat berries, or any other grain.
Put whatever veggies you have available: carrots, onion, celery, potatoes and make a nice soup.
I think I've created a self-perpetuating cycle of lamb broth. What does one do with lamb broth? Make lamb soup. What's the cheapest way to get lamb? Bone-in cuts. What does one do with the bones? Make broth.
