    Quick and hearty breakfast ideas

I have company coming for some events that will necessitate eating a hearty breakfast and get us out of the house by 6:30 am. We'll be outside all day and it will likely be pretty cool in the mornings. Trying to think of breakfast items that can either be made the night before, or very quickly in the morning.

A big bowl of cut up fruit (canteloupe, blueberries, strawberries for example).
Perhaps some sort of egg thing? Fritatta? Quiche?
    Coffee

Toast and cold cereal is a last resort. None of us are oatmeal fans.

    Looking for ideas, recipes.

Make-your-own fruit and yogurt parfaits? Grilled PB & banana sandwiches? There's also some good recipes for energy bars and the like here on TE.

Quiche is a good one. I like baked oatmeal for a easy, filling, feed-an-army breakfast. To me, it tastes more cookie-/cake-like when it's baked.

I've made these Cottage Cheese Sun-Dried Tomato Muffins before when we go camping. I ended up eating them for breakfast. They are hearty and savory, a nice option for breakfast and can be made ahead of time (or taken along as a snack).

I'm a sucker for fried egg sandwiches. Fast, quick, and you can eat them in the car.

Those look delicious, but the original recipe that was her inspiration looks downright spectacular! It almost makes me want to eat bread again!

Those do look good, but I have celiac disease and just seeing bread makes me feel a little queasy Even though there are decent gluten free options now.

    Ya'll enjoy them for me.

I made these this morning for my boys. They loved them! I will definitely make them again. Thanks for the suggestion!

Sweet potato egg boats - notes

OK, I made this last night. It was OK (and I like sweet potatoes, and eggs, and even cream cheese). But it was bland.

I had 2 good sized sweet potatoes, baked, and cut out good sized wedges. Filled with the egg/mushroom mixture, baked, and broiled per directions. I had a LOT of egg mixture left over (my eggs were probably XL but still), so I put the cut out sweet potatoes into 2 small ramekins, and poured the leftover egg mixture over top, and continued with the recipe. They did get nice and puffy, and browned nicely.

Odd, but I really liked the ramekin mixture better than that cooked inside the sweet potato. Maybe because the ratio of eggs to potato was higher? I just ate one of the ramekins for lunch today.

I may have not added enough (or any) salt and pepper.
Cream cheese melts nicely in the microwave in about 20 seconds.

The cream cheese was kind of bland, wondering if a gruyere might be better? I think this could also use some shallots or onion with the egg mixture, or even some red pepper flakes. Definitely more chives. Anything to perk it up a bit.

Then again we had it for dinner, maybe bland is better for breakfast?

I think I will work on a variation of this.

Wow! These look good too. Esp the make ahead of time part. I'm really not interested in a lot of cooking at 5am...

I use this recipe and love these muffins. They are delicious and filling.

Do you know what your guests like to eat? Breakfast preferences are so variable -- for example, I can't stand yogurt in the morning but like it any other time of day.

Great ideas in this thread. I'm glad you asked.
