I'm being invaded! What to do with mint?

I need to, uh, trim my mint plant in order to prevent it from taking over my windowsill. What do I do with all those leaves, now that I really can't put it on cold desserts?
At least I don't leave slime trails.

    Mojitos?

I give entire stalks to friends and coworkers. That plant cannot die.

You can always dry it and use it for tea later - if you don't feel in the mood for that much tea now....

Put it in a concrete vault. Burn it. Bury it several miles deep. It will come back.
