    Great Biking Snack: Fruity Oaties Recipe

    Here is the recipe for my favorite biking snack. I call it "Fruity Oaties".

    2 cups oats
    1/2 cup raisins (and/or cranberries, chopped apricots, or prunes)
    1 tsp. cinnamon
    1/2 cup peanut butter (softened in microwave)
    1/3 cup applesauce
    1 egg (well beaten)
    1 banana, mashed
    1/2 cup chopped nuts (or I just use crunchy peanut butter)

    Mix in large bowl. Press into a greased 9 inch baking pan. (I like to double the recipe and spread on a cookie sheet.) Bake at 350 for about 25 minutes or until edges are good and brown. Cut into squares.

    There are a couple biking-related sections... Pre-ride fuel, bento-box goodies (during ride) and post-ride recovery.

    Yes, they're great for the road. They really give me an energy boost! I tried the link to the cookbook, but I wasn't able to get to it. What do I need to do?

    Reesha, I love the front cover of our TE cookbook. It's brilliant that..edible fruity bike!! Did you do that? I would suggest you add this new, fixed link to other topic titled threads on cookbook or start-up a new thread topic..so people can find the cookbook.

    Lakerider, they sound delicious. Assuming I don't eat them all immediately, how long do you find they stay fresh for? Have you frozen them? Thx!

    Fruity Oaties will keep in the refrigerater for several days or you can keep them in the freezer. They usually don't last long around my house though. I like to reheat them in the microwave when I eat them at home.

    thx! i find snacks last longer at my home if they are quickly frozen! thx for sharing this recipe.
