    pecans!

    no one could stop eating them at thanksgiving.

    1lb pecans
    1 egg white
    1 tbs water
    1 c. splenda
    lots of cinn.
    dash of salt

    preheat 250
    mix egg white and water together in small bowl until frothy...
    put pecans in large ziplock baggy
    pour eggwhite mixture into the baggy with the pecans
    shake shake shake!
    add sugar, cinn, and salt
    shake shake shake
    pour onto greesed baking sheet
    bake 1 hour. stir every 15 minutes!

    I've used that recipe many times (although I use sugar). They're DELISH!

    My pecan trees went ape this year and I'm inviting the neighbors into the yard to get all they want! I picked up 3 five-gallon buckets, and a couple of neighbors have come by and picked up at least that many this year. It's incredible.

    I love pecans. My dog Lucy loves them, too, picks the up right off the ground and crunches them open with her teeth. Then picks through the remains to get the nut. It's hilarious!

    Here's another recipe I found recently. It was a hit at a party...

    Sugar Glazed Spicy Pecans

    Makes 2 cups

    2 tsp fennel seeds
    1/2 cup granulated sugar
    1 tsp crushed dried chilies
    1 tsp salt
    2 cups pecan halves
    3 tbsp water

    Preheat oven to 325 F. Line a baking sheet with parchment paper and spray with cooking oil. Grind fennel seeds with a mortar and pestle or mini food chopper. In a bowl, mix ground seeds, sugar, chilies, salt and pecan halves. Stir in water. Spread mixture on baking sheet in a single layer. Bake for 20 minutes, stirring often. Remove and cool on baking sheet. Nuts will become crispier as they cool. Can be prepared up to a week ahead. Serve in a candy dish.
