My call with Seven was weird....it was like I was interviewing for a job! 
I, too, was totally stressed out about it. But ultimately, I just talked to the guy. I told him what kind of riding I liked to do...what my goals were on a bike...where my body had aches and pains (when riding, how often, how bad, etc.). I don't think I'm super articulate about stiffness and compliance needs or wants, but I told them what I was hoping for. And they delivered.
Hopefully, you'll get a good person who will have done bunches of these calls before and can kind of lead you along when you feel you're at a loss.

Oh...and I'd vote for the standard lettering - not the panels.
