    Vegetarian Lunch Recipe....Yum!

    I tried this recipe for lunch and thought I would share it. It's scrumptious and comes out to about 350 calories (not too many, but not super low either).

    Fruit and Nut Pilaf
    Ingredients
    3 tbsp long grain brown rice
    1 tbsp raisins
    4 dried apricots, chopped
    1/2 oz (about 8) walnuts, chopped
    1/4 cup frozen corn kernels
    1/4 cup frozen green peas

    1. Make rice as usual. Add salt if you like (I didn't though).
    2. During last 10 minutes of cooking, add frozen corn and peas.
    3. Once rice is done, add remaining ingredients. Mix and serve hot or cold.

    I definitely prefer is hot. It's delicious! I made a big batch on sunday and just take serving sizes to work and heat it up in the microwave. Also, when I made it, it looked like a ton. Then I divided it out and wondered if I would be full from it. I am definitely full from it!! It's a very good serving size. Not enough to make you stuffed, but enough to think you're full

    Just thought I would share it because I definitely enjoyed the taste and it's super easy to make, considering it can be made ahead of time!

    I'll have DH get some dried apricots so that we can make this - I think we have all the other ingredients around.

    I would be tempted to put the raisins and the apricots in before the rice is cooked, too, so they get rehydrated and absorb juices.

    What do you think?

    That's not a bad idea. Maybe add them when the peas and corn are added. I did notice that when I reheated it, there was a lot of moisture and they seemed to absorb some of it so they were juicy.
