I've done a spinach & feta cheese quiche that's pretty good. What did you have in mind?
1 cup sour cream
1/2 cup milk
2 eggs + 1 egg white
salt & pepper to taste
1 box frozen chopped spinach, thawed and the mositure squeezed out.

1 pie crust partially cooked (about 8 min with pie weights, then 10 more minutes without. And dried beans over a piece of foil makes good pie weights.)
Beat eggs, stir in sour cream, and milk. Crumble feta cheese and spinach in partially cooked pie crust. Pour over egg mixture. Bake at 350F for an hour or until a knife inserted in the middle comes out clean. You may need to cover the pie crust edges with strips of foil to keep them from browning too much.
Cool ~15 min before cutting. Torture, I know.

You can put the spanakopita filling in any type of pastry shell or crust. Phyllo is for special occasions and company, AFAIC.
I don't use sour cream, milk or extra egg white; I always use fresh oregano and parsley. Feta cheese is so salty I don't find a need to add salt. Otherwise pretty much the same thing.

I have a recipe from my grandmother but I don't measure and I'm not very good about putting it into words but here goes . . .
1 small onion
1 package thawed frozen spinach
2-3 eggs (or more depending on size)
A few pieces of sliced ham
A few pieces of sliced cheese (cheddar usually or whatever I've got around)
Olive oil
Pie crust (top and bottom)
Salt and pepper
Heat a splash of oil in a sauce pan and then saute onion until soft. Add spinach and cook a bit to get any excess water out. Then I add the eggs one at a time and stir in quickly. I just keep adding until I get the slightly fluffy texture I'm looking for. Sorry I can't be more specific. Salt and pepper to taste.
In a 9 inch pie dish, place your bottom crust. Add a layer of ham and a layer of cheese. Add in your spinach filling. Put on the top crust, crimp the edges however you'd like, and make a few slits in the top. Bake about 30-40 minutes until the crust is golden brown.
