    Seared Tofu with Garlic, Swiss Chard and Pine Nuts

    A vegan friend sent me the link to this recipe. I'm not vegan, but often eat vegetarian meals, by preference.

    This recipe is FABULOUS. I made it last night and it was easy, very fast and delicious. My only comment is that the recipe calls for 8oz of tofu to make 4 servings.

    Tofu typically comes in 16oz tubs, so I doubled the recipe. I also doubled the serving. At 4 WW points, the double serving made a nice entree, accompanied by 1/2 of a baked acorn squash and a nice green salad.

    Looks yummy. What are the green diamonds next to the tofu and chard for?

    Weight watchers marks certain foods as "filling foods". If you are on the WW plan, you have the option to eat as much as you like from the filling foods list, without tracking portion size.

    Excellent! I love tofu, and can never have too many veggies, so that's great to know.
