Why not check the results of last year's edition of the same race online, for a good comparison (same course, similar crowd)?
Of course that only works if this is not the first race on that course!

What kind of average speed do y'all get in the Triathlons? I'm only doing the Sprint length (15 miles) and the bike leg only and am wondering what kind of speed the "real" participants will be getting.

They don't post the single leg times--it's not a "serious" Tri but a local one that is part of a local festival. We're not hoping to win, just have fun and get the T-Shirt!
Then you can check this page for an example (the UBC Sprint triathlon in 2008):

The bike leg is 20 km and the terrain is not especially easy, often has a headwind on the uphill portion, as well as one short-steep hill (to be repeated twice). Some people show up on nice tri bikes, others on old rusty mountain bikes.
If you just want to finish, don't worry about speed and go for it!!
