    Cooked tomatoes: sugar crash

    This has been the 2nd time, I've made a dish with cooked tomatoes and feel afterwards as if I've had a sugar crash.

    Anyone else had this reaction? I don't put any sugar or honey in my tomato dishes.

    and I enjoy tomatoes, so this reaction is not welcome.

    Did you have enough protein with the tomato? I crash if I eat anything with out including adequate protein- especially in the past year......... (turned 50, raging menopause...)

    I suppose that might mean beans if not a meat with tomatoes. Not sure that will solve my problem.

    Actually I seldom cook with beans and tomatoes. I have beans dishes outside of home. But at home...I'd rather not deal with flatulence and constipation. Yea, I know there are homemade remedies.

    I'm only starting to feel better --it's been 3 hrs. since I've had the tomato dish. It was light green curry tomato and eggplant dish that I cooked up.

    Were the tomatoes fresh or canned? Some canned varieties have added sugar.

    Another thing to look for is the overall nutrient content of the entire meal. Does it have a mix of protein, carbs and fat? You need a little bit of all three in every meal. Did you eat enough calories? Tomatoes and eggplants are both very low in calories. If you eat all carbs and not enough calories, you're going to crash.

    Thirding it with the protein. What was in there? I know I can't eat a meal solely of veggies because it'll make my blood sugar levels crash and give me gastric pains pretty fast. There needs to be complex carbs and a good solid source of protein in there.

    We sometimes forget that tomatoes are a fruit. It's why tomato sauce can burn if overcooked or caramelize to a lovely flavor. Just like cooking with any fruit it's good to balance protein along with texture, taste and even color.
