A vegan friend sent me the link to this recipe. I'm not vegan, but often eat vegetarian meals, by preference.
This recipe is FABULOUS. I made it last night and it was easy, very fast and delicious. My only comment is that the recipe calls for 8oz of tofu to make 4 servings.
Tofu typically comes in 16oz tubs, so I doubled the recipe. I also doubled the serving. At 4 WW points, the double serving made a nice entree, accompanied by 1/2 of a baked acorn squash and a nice green salad.

I made great and very easy Cubanish black beans in my slow cooker yesterday. They would have been great with kale, so I'll get some for next time. I put lots of garlic in those beans, and cooked them with chicken broth instead of water. And added a jalapeno pepper and some spices. yum.
I buy fresh garlic by the bagful at Costco. It never goes to waste!
BTW - there's an Elephant Garlic Festival in North Plains (about 10 miles from here) every year in the summer. Lots of fun! I bought the best variety of garlic there last year. Purple-skinned, excellent taste. I wish I knew the variety's name. I would plant some. Last year I planted a clove of elephant and this year, I have my own plant! I'll divide it and replant so I can have a real harvest next year.
garlic is very easy to grow. Plant cloves in the fall, not the spring. You'll have enough to braid.
That recipe sounds wonderful.. I love tofu esp seared or stir fried. My friend that cooks a lot of tofu dishes suggested marinating the tofu in the low sod soy sauce for a bit before searing it..Thank you for sharing the recipe.. please share more as they come along![]()
I gave it about 20 minutes in the soy sauce before searing. It was really really tasty. I may make some more tonight!

The Shop-Rite near me sells 16 oz. packages of tofu that are divided into 2-8 oz sealed portions. It stays fresh, and was actually cheaper than a 16 oz. package of Nasoya. Perfect for small households!
