Peanut butter and banana on bread, cut into quarters. Best if it doesn't get squished, so I put it in my seat bag as opposed to my jersey pocket.
I love to cook and bake, but I've found that homemade bars tend to be really heavy and dense and not to my liking. But you can often substitute some of the fat with applesauce in recipes if you are concerned about fat (just remember that we all need some fat in our diets).
I have used this recipe for oatmeal bars. It's nothing special nutritionally, but it is low fat and tastes okay.
Tulip - that is such a simple idea that I hadn't thought about it! Bananas can be problematical for me, but I can eat them occasionally.
PamNY, thanks for the oatmeal bar recipe. I think it would be quite good with a mixed whole grain hot cereal, I have something that Trader Joe's sells in mind.
This is a page with several DIY energy bars recipes that came on a LHT owners list I am on. The first recipe looks interesting, and they were able to calculate nutritional information on it. I may have to try this once my Cliff bars run out just to see what it is like. 15 grams of fat seems kind of high though... I may not do this more than one time, but it will be interesting

I've made the lara bars in various configurations and they are easy and very tasty (much better than packaged lara bars IMO, because are fresh). i do not recommend her method for creating the individual bars- very slow and sticky. better is to roll out the mixture between some wax paper using a rolling pin then cut into bar shapes.
